Cosy Cottagecore Homemade Granola

Welcome to one of my most frequently made recipes in my home. It’s a recipe to make your own granola. Supermarket granola is sadly becoming so expensive and can include ingredients that I don’t love for my family. So instead I have been refining my own homemade granola recipe. We all love this recipe! My daughter likes to help mix this one so she can do a taste test for us.
This granola has a great cottagecore aesthetic, and you can display it in your kitchen. Find some cottagecore display containers like these. This granola also makes a beautiful gift.
We love eating our granola with yoghurt.
This granola recipe includes nuts, you can omit those if needed and substitute for something non-allergic.
I love having homemade granola ready for the cooler months of Autumn and Winter with warming cinnamon. I might share a summer version of this with different fruits.
Once you get the rhythm with making this recipe, you’ll learn that you can bring it together fairly quickly and substitute for what you have in your pantry. I also like that the cook time is short.
Granola Recipe
Ingredients
2 ½ cups rolled oats
1 cup coconut flakes
½ cup coconut shredded
⅓ cup dried cranberries or sultanas
½ cup almonds roughly chopped
⅓ cup chia seeds
½ teaspoon salt
1 teaspoon cinnamon
⅓ cup coconut oil
⅓ cup honey
1 teaspoon vanilla extract
2 tablespoons peanut butter
1 egg
Method
Step 1) Preheat the oven to 320 °F (160 °C). I use a stainless steel oven tray for baking my granola that does not require baking paper. If you don’t have this tray, line your oven tray.
Step 2) In a large bowl, combine the dry ingredients: oats, coconut, cranberries, almond, chia seeds, salt and cinnamon.
Step 3) Combine the coconut oil, honey, vanilla and peanut butter in a saucepan. Melt together. Gently stir and do not leave unsupervised so you are careful not to burn.
Step 4) Pour the stove mixture above the dry mixture and combine well.
Step 5) Crack an egg into the mixture and combine. This will help some of the granola to bind together when cooking.
Step 6) Bake in the over for 20 minutes on a lower level (not too close to heat). After 20 minutes, turn off your oven and open the oven door partially. Allow your granola to rest for 5 minutes before removing it from oven.
Step 7) Once granola is cooled, use a spatula to transfer to a storage container.

Notes
You can omit the chia seeds if you don’t have any! They can also be swapped for pumpkin seeds.
Almonds can be omitted if you want nut free. Alternatively, you could use walnuts.
