Honey Gingerbread Cookies Recipe for Christmas

Learn how to make soft, chewy gingerbread men using honey instead of molasses! This recipe is lots of fun to make with the children, and perfectly spiced for Christmas baking.

I’m so excited to be sharing a Christmas recipe with you. I’ve been busy perfecting this recipe with my children this July. It was very much a Christmas in July!

Honey Gingerbread Cookies

Since we are a family that always has honey in the pantry, but not molasses. For any families like mine, I wanted to share a recipe with you for gingerbread men made with honey.

Soft chewy gingerbread men using honey instead of molasses!

Ingredients

  • 125 grams butter, softened
  • 1/2 cup brown sugar
  • 1/3 cup honey
  • 1 egg yolk
  • 1 teaspoon vanilla
  • 2 1/5 cup of flour
  • 2 teaspoons cinnamon
  • 1.5 teaspoons ground ginger
  • 1 teaspoon baking soda (bicarbonate of soda)
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon sea salt (if using unsalted butter)
  • 1 tablespoon milk

Instructions

  1. Mix together the dry ingredients. Flour, cinnamon, ground ginger, baking soda, nutmeg and sea salt (optional).
  2. Beat the butter and sugar together with an electric mixer. Beat in the honey, egg yolk and vanilla until combined.
  3. Add the butter blend to the dry ingredients, stir to combine with a wooden spoon. Then knead on a floured benchtop to combine thoroughly. If very dry, add a tablespoon of milk. Once combined, shape into a flat disk in plastic wrap and refrigerate for at least 30 minutes (ideally, 1 hour).
